20w-40
I do not see any reason to run oil that thick in a late modle vette newer moters are built mush tighter I change oil 2 times a year 5W30 winter 10W30 summer oil pres. is great no smoke no useage 1984 70K mi. Now if it was a Ford
for normal everyday use (stock motor of course), just use what your owners manual says, change it often (myself, every 5000 miles), and use a quality name brand oil and filter. sometimes, i think we put way too much into this oil thing. no flames, just my 2 cents...
I use the Mobil 15w50 in my L98 Formula just because with 5w30 the oil pressure was waaaayyy low. It seems to run better with the 15w50 and the pressure is much better.
On our 86 vet it does just fine with 5w30.

For normal everyday driving what the manual calls for is fine, unless you have a low oil pressure problem, then a higher viscosity will help raise it .. WW

and dont cheap out on the filter get a good one
For whatever reason many years ago, GM stated specifically not to use 20W-40 oil in small block Chevy's. Use of that weight oil would void the factory warranty. Today's small-block motors are designed for 5W-30 weight oil or a 10W-30 where temperature ranges permit.
Some say that a higher viscosity number helps with very low oil pressure, but if you have to do that to keep pressure up to minimum levels, it's time for a rebuild, not a heavier oil.

I use 15w-50 in the track rat but don't know why you would ever want (need) to run something like that in a "normally" driven car. If you have below normal oil pressure with 5w-30/10w-30, putting heavier oil in it is a half-azzed band-aid fix for a more serious problem.
i run 20w50 redline synthetic in my 85 and its got nice cool oil temps and great psi.iys got close to 200,000.but i live in south florida where it doesnt get to cold.ive been very happy with redline.ive done the valve cover gaskets recently and it was beautifully clean.ive yet to read anything about any other synthetic being better than redline.

Try Googling:
Oil Filter Comparison
There are several folks that have bought every oil filter
that fits their car, and cut them open, and posted the
results.
Some of the name brands are junk. Some are better
than the pack.
Me: I use Wix, used to use Fram.
Funny story: I live in a small town (Morgan Hill) about
20 miles south of San Jose. One of our local auto parts
stores used to carry Wix, and switched to their house
brand (AutoZone, I think) which they claimed was
made by Wix to the same specs. Yah, right. So I went
the Wix web site looking for dealers. The nearest one
was about 10 miles into San Jose, but right near my
GF's place. I went to the address, and it was a really
naughty lingerie and toys shop. I eventually tracked
down the auto parts store. They'd moved a half mile
down the street about 10 years before.
Hey, Linda, I gotta go out and get some oil filters. ;-)

I've used Mobil1 0-w40 and have been satisfied with it here in Texas. It's thin enough for any cold temp you will ever encounter and I think the 40 end of it gives good protection during the high speed desert crossings in the summer. It's a bit hard to find though, so I buy every orphan bottle I see when I'm in W-mart or the Zone. When I can't find the 0-w40 Mobil1 I use Valvoline's 5-W30 Synth which is usually almost $5 cheaper than the same amount of Mobil1 and claimed to be better.(of course everybody claims to be the best oil.)
as for filters, i just buy ac delco's by the case from my local chevy dealer. i pay about $4/each for a box of 12. i'm sure they meet the filtering requirements as defined by chevrolet engineering. here's a little fact about delco filters - filters sold (and installed) at dealerships are made in the USA. the $2 delco's sold at discount houses are made in mexico. difference in quality - ??? -
