Terry is good, but be ready to get your wallet out, he's not cheap but he builds some really stout stuff. Also, plan on some time on his waiting list for an engine, he is usually very busy.
Frankly, a little bit of overkill for a stroker, unless you're headed to the track. I would install a crate motor and then take it to Terry for some "tweaking".
FYI, this stroker never overheats in a C3!
I agree Jon, I ran a 383 stroker, Crower crank, Crane Fireball cam, Thorley headers, and two 850 Holley twin pumpers on my '74 Z28 (4-speed) for two years as a daily driver on a fresh build by a well respected local builder (predominatly built stock car builds) relatively problem free (except for the Holleys) so I think if you start with a good mechanic who knows his business you're in.
I also think a lot of overheating can come from an undermaintained cooling system will give more problems than punchin' it out to 383. I have my system serviced every 18 months so I break on service in the Spring and the next in the Fall and I still believe in having the system backflushed at service time.
