303 Protectant
I've searched the forums and found lots of good feedback on 303 Protectant, so I just bought a bottle off of eBay. My primary use for it will be on the bottom windshield seal. It's dry and cracking. I suspect that when I apply it, I'll get some on the dashboard and window, since the space where they all come together is very small. If I get some on the front edge of dashboard up against the window, will it be visible by giving it a different appearance than the rest of the dash?

303 is a quality product. I've been using it for years on my ’96, 303 keeps the surfaces looking new.
For protecting your interior/dash, the UV protectant in 303 is an added plus.
If you are only wanting to apply it to the the seal and not get any on your dash, finding a thin pliable material could be used as a barrier between the two (something the thickness of a credit card). It’s a tight squeeze in that area, you could use extended swabs to make the reach a little easier.
