Fans come on at 228* and 237*F. So stop and go traffic expect 230*, generally about 210* on the highway. 260* is the shutdown point. Also, the digital gauge is a little more accurate than the analog gauge.
At any speed above 35mph, you should run in the 195°F - 200°F range (Digital gauge)
Sitting at stopped for any length of time (traffic light, heavy traffic), the temps will hover in the 217° - 235°F range (Digital gauge).

Mine settles in at 209* and pretty much stays there as long as I'm moving. Traffic gets it into the 220's. When I have the A/C on which runs the fans, it actually runs a few degrees cooler in traffic 200*-205*.

Yep, the Corvette is one of the few cars that will actually run cooler with the A/C on,
because it forces the cooling fans to run at a lower engine temperature than they normally would.
