I have a friend who took a Skip Barber class at Laguna Seca and absolutely loved it. Had lots and lots of fun, and learned even more. That was over two years ago he still raves about it.

Barber's Racing school definately in Limerock, CT. Youll see some unbelievable cars too if you go at the right time! I used to go for the races, lots of fun there.
