After driving around the block a few times, about (6mins) my oil press was 49 and my oil temp was 151-161. My cool temp driving was 185-195 and my cool temp sitting went from205 to 235.
Sounds just fine to me. My 92 is an LT1 and was thus built without an oil cooler. I've got to push the car a little to get the oil temps above 200. If I'm just driving it will eventually creep up there, but it take a pretty long trip. The earlier cars did have an oil cooler so it would serve to reason that they would run cooler. Some TPI guys will chime in but I think you're just fine.
Now I've heard it said that you should drive it hard every now and then and get those oil temps up above 212* otherwise the moisture will never boil out of the oil and degrade it faster. Sounds reasonable but I have done no testing to prove it one way or the other.
Takes 20 or 30 minutes to heat the oil up. On the highway mine runs 20* higher than the the water temp. In town, about the same as the water.
Figure on oil temps being 15-30 degrees higher than coolant temps once the engine is up to normal operating temps. With my 87, in-town driving will show oil temps close to coolant temps until the car has been driven for 20-30 minutes. Then I see a slight increase in oil temps. I use Mobil-1 5W30.
During track days in hot weather, I'll see coolant temps in the 200-220 range and oil temps around 220-240. Temps drop quickly on cool-down laps to a normal 180 coolant and 200 oil temps.

What are your coolant temps? I have never had oil temps any higher then 220-222 with either my old L-98 or my new 383, even on the hottest days........WW
Sounds normal for a stock setup, alot of the guys on here don't like there cars running at the factory settings, which is what your temps are..There's nothing wrong with your temps being at 200-220 but alot of us feel better with coolant temps closer to 180-190.. Alot of use are old school and temps that high just don't feel right.... With the setup I have now my car won't go over 195 no matter how hot it gets and my normal running temp is 180-183.......WW
My car dies down as if its about to shut off (sometimes) when it gets around 230*, do you guys think that has anything to do with the engine getting to hot? I dont feel comfortable with the factory temps so what do I have to do to get my fan to come on at a 195*-200*?
Turning the fans on won't do anything if you're already rolling more than 35mph anyway, because the air is already flowing across the radiator at road speed. If the temp goes up more than you want to see while your in slow traffic or stopped at a light, turning on the A/C will trigger the fans. The car will actually cool down while sitting dead still with the A/C on.
My 85 with 152K using synthetic 10w40, the oil is generally 10-15 degrees higher than the coolant temp. Normally cruising temps for oil are about 190 and 185 for coolant. City and idle temps are around 215 for oil and 195 for coolant. Oil pressure is around 55-60 cruising as well when warm. Using 5w30, then oil temps and pressure are different however. I find the oil and coolant temps are closer to each other and the idle pressure is greater.
I just replaced my thermostat with a 165 deg and,of course, with the engine running cooler the oil is running cooler. Oh,1994 coupe btw. The gauge says the oil should be at 215 (likely to vaporize moisture...boiling point is 212) and coolant temp should be about 185. With the stock thermostat: coolant ran around 205 and reached 220 in traffic, 235 is heavy traffic and would take about 10-15 minutes to get to temp; Oil used to run right at 212-216 and took about 30 minutes to get there. With the new thermostat: coolant runs around 178-185,205 in traffic; oil is only reaching 185-195. I reach 205 on the oil today, but it took forever (ambient temp ~75 deg). It should be fine like this, but I would like the oil to get to at least 212 to release the water vapor. I think a 185 thermostat with a larger than stock opening should do the job.

Very few on here recommend a 165 stat because all it does is delay warm up time as you found out.
Ultimately your temps are still controlled by the fan operating temps set in the tune regardless what stat you run
