Default temp question

I have a 94 coupe and a month or so ago I had to change the optispark, and in the process the temp sender broke and was replaced. since the job the digital readout is saying 205 on the freeway, and after when I get into town and drive around in traffic it goes to 221 or even up to 227. On the analog guage, on the freeway it hangs around the first line after the 815, and in town it goes to the second line. Also I should mention that on the freeway it is not always rock steady at 205, it climbs to 209 or 210 then drops back to 203 then stabilizes at 205 (which seems to me that that is where the thermostat is opening). I will also mention that this is the first few times i am running it in the summer where it is 105 out side. I have a new water pump, a new aluminum radiator, and 4 months ago I also replaced the T-stat

Do you think this is normal , do you think the digital readout is just high due to the new sender, or do you think my T-stat is not functioning correctly.
Lastly, I am obviously running the ac to make sure the fan is on

I also have an aluminum radiator, it's hot in SoCal and I drive around 188°F on the freeway. I assume all the radiator shroud/lower support area area was clean when you installed the new radiator.

Check for a plastic bag, newspaper or leaves obstructing the air flow. The LT1 operates at higher temperatures. 190°-220° would be normal.

Your temps are fine, normal is around 210-225. 230 would still fine.

sounds fine. What temp t-stat did you install?

Your temps are fine, normal is around 210-225. 230 would still fine.
While moving? Seems high to me. Mine is 185 or so driving; it gets up to 210 when stopped and idling, but when the fans are turned on it drops right back to T-stat-controlled 185.

It seems reasonable to assume that if GM wanted these cars to run at 210-225 under normal operation they would have installed OEM t-stats in that temp range.

It came with a 195 stat. A 195 stat begins to open at 195, but isn't fully open for ten or fifteen degrees after that. That means the engine is designed to run at 205 minimum.
