Thinking of gutting the cat on my car since I don't have emission testing... is the O2 sensor pre cat or post? Would gutting it put codes on the computer?
What year? On my '87 the O2 sensor is (was!) just located below where the driver's side exhaust pipe attaches to the bottom of the exhaust manifold, and was easily visible. When I installed headers, I just moved the O2 sensor to the driver's side reducer. Bought a bung and welded it to the reducer. The wire was long enough to easily reach the new location. No codes either.
Gutting/removal of the cat will not set any codes. But why not remove the factory cat and replace with a aftermarket high-flow cat? Helps with cleaning the exhaust gasses and the high-flow versions won't hurt the airflow. Removing the AIR pump and tubing won't set any codes either.

It gets rid of all the junk on the front of you engine. Allows you better access to the front of the engine and enables you to clean that area very well. Before:
