There is a grey wire that comes from Eng. and Metric switch but I can't find the wire it goes to under the dash. All I see is a pink wire with black stripe that has the same connection. Any thoughts?

One of the Gray wires goes to pin A2 of the Dash Cluster. The other Gray wire which appears to be the one in your hand would go to a mating connector that changes the wire color to Dark Blue and goes to the HVAC C68 Control Head Pin D16.
Since you have C60 manual AC you have no digital display and that wire is not used.
When the switch is in Metric position it sends the proper voltage to the Dash Cluster and C68 control head to display the data in Metric.
