200 is way too cool. You could have problems running that cool. You want to be at least 210. At least.

I run about 225 on the track. My oil is usually around 250.

Get an infrared scan gun and check all your temps.

If you're concerned call DeWitt and get one of their radiators.

Oh, and make sure you use only distilled water.

Cruising I am definitely under 200 but my builder said it was ok.

Now i'm going a little further with the project and need some more
suggestions. Where i live there are a few bridges and if they open to
let a ship pass you sit and wait. All the waiting and the temps go way
up.
I'd like to put in a 180* thermostat and a temperature switch that will
turn my fans on sooner. This C4 is a 1988. I've seen switches in
magazines, but don't have a clue as what to use. Thanks
Not sure what thermostat is in an 88 but surprised to find out that a 180 is in my1994. You may want to check out before you replace since you may be wasting your time.

My water temps run 210-215 (in TX). Oil temps about 10 degrees higher. Been that way since new (1989).

My car runs at about 200 when "cool" . The downloaded owners manual says spec is 180. Wish they had put in a 180 because it's probably a 195 as you have pointed out

On a 195, probably sounds about right. I am not sure that you are going to see much more power dropping it to 180.
