I just bought my first Corvette, a 1985, and to me the rear end sits too high. I know nothing about this type of rear suspension and I don't want to screw anything up. Is there an easy way to lower it?

If the bolts that pass through each end of the rear spring are now less than 8" in length you can use longer bolts to accomplish some. It's certainly wise to use good quality hardware to accomplish the change.
The original spec for the bolt is M14X2.0 and most use something other than. There are kits available from many re-sellers but I've never used any of those. I'd think maybe something 9" or a "stretch" is 9 1/2 are OK. Longer I'd avoid. Many I believe use 9/16-18 and that should do well. Grade 8 and use a Nyloc prevailing torque nut or a castellated after drilling. Correct M14 10.9 or 9/16-18 Grade 8 aren't inexpensive but I'd suggest NOT substituting with anything other. I haven't checked the actual spec of the OE in a very long time, they may actually be 9.8. You could check your bolt head for the actual if yours are actually OE still.
