My 1993 LT1 runs at 200-210 degrees in Florida with the air conditioning on. When I turn the a/c off the temperature rises to over 230. What can cause this?

Safety Car
These cars run hot for emission mandates . They also start fast because less fuel is evaporated in atmosphere. If it was not for trump pushing these crazy epa laws back we all would be walking!

Yes these cars are designed to run hotter than many other cars of this era. But most modern cars are running in the 210-225F range to improve emissions and fuel economy. No longer is 180 the normal operating temperature.
What happens when the temp hits 230? It should drop quickly because the cooling fan (at least one) is triggered at 228 and the other at 235, if I recall. If the temp does not drop, you certainly have something going on - read the sticky as suggested by charliet615.

Burning Brakes
I'm sure that the sticky on radiators will mention debris in the radiator and between it and a/c as well. Also any bent fins. Harbor freight has a tool for straightening fins. Time consuming but wotks. C4's are great for sucking up stuff especially in the fall with leaves! Check fan relays to see if fans are on. If they both kick on when A/c is turned on than relays are ok. I replaced my radiator to a single core Dewitts unit and installed Spal fans that have more air flow than stock. Work great!

And if radiator debris is the culprit, this wire mesh installation is one of the best (and cheapest) things I ever did. Of course I cleaned out the existing debris first and after 3 years it is clean as ever in that space. I paid $8 for a roll of galvanized steel mesh, 3/8" holes, still have about 2/3 of the roll left after the job. I did 2 layers for strength - it will catch most leaves and small rocks but it won't stop a flying 2x4. Highly recommended.
