I recall reading somewhere that part of the system is that it shuts off the fuel supply,is this correct?
All at once mine is acting like it's not getting fuel. It starts immediately goes to about 900 rpm and dies...very roughly.
Is there some way to disable the security system, like a fuse?

Vats has 2 parts, a starter kill that can be bypassed via wiring, and a fuel cut that has to be removed with a tune. Pcm of NC can sell you what you need for this.
If you have the starter kill part disabled and vats shuts your car down, the car will crank, catch, then shut down immediately. It won't even really start and idle. The security light will also notify you. That said, mine was intermittent, and so if ou let it sit for 5 minutes the security system would reset and it would usually start after that.
