Just bought a 94 with 97K on it. Ridden hard, put up wet. New it had an overheating issue when I bought. Bad radiator cap, Dirt clogging the radiator. Installed new 180 thermostat and cap. Cleaned front of radiator. Thought I had it solved. Went for drive and temp was holding steady at about 195. Then all of a sudden needle pegs. After a moment it started to go down, "some". A/C was on the whole time so I believe the fans were on. When I got it home and parked, the cooling system sounds like it was regurgitating it's lunch. Even with the A/C on will the computer shut the fans off? Taking all suggestions.
Does any one know of some one that can reprogram my ECM to have the fans come on earlier?

Doesn't sound like a fan problem to me, sounds like you didn't get all of the air out of the system (I'm not an expert, I could be wrong). There are lots of threads describing how to burp LT1s.
This is an explanation I lifted from Nokones:
If you just filled the cooling system with fluids, did you burp the cooling system, Yes, I mean burp it.? The LT1 engines have to be burped. You may have an air pocket in the block which is not unusual for the LT1s. The air bleeder screw is on the thermostat housing. The best way to do the burping is jack up the right front corner and open the bleeder when the temp is warmed up when you can assume that the thermostat is opened, open the bleeder screw and fill the cooling system as needed at the radiator, not the reservoir until you get a steady stream of fluid coming out of the bleeder.

I discovered on my LT1 when I changed the cylinder heads this past winter that my driver's side crossover pipe was completely plugged at the banjo bolt. It had rust and crud built up plugging the small passage holes. So needless to say coolant and steam could not escape my driver's side of the engine block. I'm not saying this is causing your over heating issue, it's more than likely an air bubble, but it's something to check.

Needle pegs to what? What did analog guage say?
Your car is supposed to run at 190 or more. Cold thermostat only delays it a few min. Burping sound means you have air in the system.
After you get it out, if it still runs way hot (+240), then the radiator has to come out for correct cleaning
