My guess would be that the other readouts are very slow to change and, if you want to monitor them with a digital readout in order to get an accurate reading, the readout would be fairly stable so you would be able to read it.
The oil pressure varies rapidly with the throttle. If it was a digital readout, it would be blur most of time, unless the engine was in a static condition. I am not sure if you would ever need an accurate readout of oil pressure. I just glance at it to make sure that I have pressure.
Besides, the failure rate compared to those of the digital display is much less common. Personally, I glad the general used some good old common sense here. Just my .02 worth. ;)

It doesn't change as fast as the speedometer does. If you do DEs (track events) you want to KNOW what your oil pressure is doing. Before I installed the autometer A-pillar guages I had the digital dash on my 86 set to OP. Oil temps I could normally judge based on water temps.
