Interesting question. I had to read it a couple of times. You can use a 160 degree stat with no problems and no check engine lights. You will not have to change your computer programming. If you have the ability, it would be good but not necessary. As far as what temperatures you can expect to run, that depends upon your location. I saw it under your name, but have no clue where thats at.

On the highway coolant temps will run about 160deg F unless air temps climb over say 90deg.

Around town it will likely run at normal temps unless you install a fan switch or program the chip.

160 degree thermostat? 180 is the about the lowest you should go. A 160 is to cold. Add 20 degrees to your thermostat number for running temps. 160 = 180.

The engine will stay in a closed loop at temps at or below 168 degrees and your mileage will suffer.

C-4 motors are designed to run at 193 to 195 degrees.
They run best at these temps.

Default 160 Thermostat

Road and Track had a tech question that had useful info. Modern
management systems expect higher temps for combustion and
emissions control. I expect that is the reason for the stock 180
unit.

Remember that a thermostat opens at closes at the specified temperature. The actual temperature that the engine sees depends on the efficiency of you cooling systemm and the ambient temperature outside.
In the summer in Barneveld, you should see temperatures in the 190 to 195 zone with a 160 T-stat in the city and 180-185 on the "A" highways. Once the outside temperature hits around 10 degrees C or lower you should see 165- 175

If you are planning to drive you car in the winter be prepared for slower warm up and less heat through the heater
