I always read between 205 and 225. If I replace the thermostat with a 160 degree unti will it help lower the temp? Is that an ok temp anyway? It seems a little on the hot side to me.

Changing the thermostat to a lower temp one will do no good. The fans are programmed to come on ad about 224 deg. So driving in town will still let it get to the fan turn on temp...the stock 195 thermostat will do the same thing. Only difference you'll see is possibly on the highway...but then 160, 195...whats the diff when plenty of cooling air is being supplied?
Looked at your profile-looks like a 98? I believe you can have your computer reprogramed to turn the fans on earlier. Much simpler on a earlier C4. I for one don't like the 160 thermos, read to many web sites-
these engines, SBC run best at 180 degrees-the gain in HP from a 160 is negligible if any.And some (including me) believe engine longevity is compromised because engine oil temps do not reach the degree to purge contaminants (moisture).BTW-your temps are OK.
Thanks for the help, make more sense now, its the fan kick on temp all right. BTW, I also have a 98...so a 96 and a 98. Life is good. Although my wife is driving the 98. I think the C4 is more of a man's car anyway, even if the performance isn't quite there with a C5. Plans are in the works for it though to make it close.
Read some of the other posts about the coolant temps, especially some of the other web sites for specifically the LT-1. There is some debate about the "right" temp. Also, with the reverse-cooling the sensors are placed differently from regular-cooling cars, so it may not be an apple-apple comparison.
My stock LT-1 at 60-80mph at 95 ambient(OAT) with A/C running shows 200-205 coolant; about 10-15 more for the oil.
