I am in the process of replacing the oil pan gasket and I am contemplating replacing the stock pan with a stroker pan. The stock pan has been slightly altered for clearance and one of the pan nuts is hard to get a good seal.
Not too sure if you should replace the pan without buying the matching oil pickup for that specific pan. I have a moroso 7 quart pan and it came with a matching oil pick up. The problem we had with this pan was that it had to be cut and welded to accomdate the oil filter location since the 86 vette had the oil cooler spacer installed and there were clearance issues with the oil filter hitting the pan. But if you pick one up make sure you get the matching oil pick up.
Might be easier to have your stock pan fixed/welded to fix the seal issue. Another solution would be to just get a replacement pan and give it the four dents to clear the crank.
My pan actually cleared my crank (scat 3.75" and eagle 6" cap screw rods) without the gasket. But amazingly, wouldn't clear with the gasket.
Also, install the neoprene gaskets clean with the exception of the corners near the #1 and #5 mains.

Use the moroso pan. Or I have one that you can buy. Its a milodon 400+ dollar pan with ALL the goodies. It did get dinged up some on the windage tray during my motor problem late this season.
I do not want to use it anymore because it is a PITA if I want to remove the pan while the motor is in the car. It has a kickout on the passengers side for windage.
The pan is really nice, but I like to pull things apart to inspect things and its an all day job removing a few of the bolts. A standard type pan makes it much easier. But if your just putting it on once and do not plan to pull it down once in a while like I do, then it would be perfect.
If you wanted to, you could get another windage tray from milidon and it would be near perfect.
Willing to sell it cheap to get some money for the moroso pan.
It clears my 4.0 inch stroke 434 like nothing.
Here's what it looks like.....
