take two of those jackstands fully extended and try to stand on top of them--while you're picking yourself up off the floor ask yourself how stable they were

There are more stable jackstands, they use a round post that slides out, and a pin that holds it in place. These types of stands are inherently unstable because they're only held up on one side of the rectangle.
Yet I have 6 of em.

Ever see how the guys in Nascar do it? They hardly ever use jackstands. Surprised I haven't seen one crushed yet, they drop the cars by accident all the time.
This is how I have my vette on jack stands. These are 6000lb stands. Last year I had 2000lb stands when I pulled my tranny. I had no problems. Sitting on these new stands it's rock solid.
You should be fine with where you have them, it's where I always put mine. Had my vette on stands for the better part of two months last year, rock solid stable and I was putting a lot of torque into some of the bolts in the exhaust. If it was going to move, it would have.

The 6000 lb stands allow me to get the car high enough to pull the trans out while on the trans jack. With smaller jackstands, you need to use the tumble and drag technique.
