Default cooling fans

Lately I noticed that the coolant temp was very lazy to drop with fans working.....up to the point that the fans never stop to runs because the coolant temp never reach the "OFF" point . (temps recovers to normal temp quickly when I'm at 40 or 50 mph speed).
I programmed my chip to start both fans at 187 and stop at 180.
If I let the car idle it goes to 188 then the fans starts... then it stay at 185-184-186-185-184-182-183-186...and it never go under 180 to stop the fans(i see it on the Datamaster ...).
I like these temps... the problem is that when i do some sprint driving (like a 1/4 mile) the temps climb to 200 and waiting for the next run the temp do not goes down at all. At the next run the temp goes to 220 and again it make a very effort to lower the temp at about 215...
At this point I'm not so confident to perform another run an the performance can suffer...
The thermostat is working for sure.

Is there a way to "increase" the speed of the fans?

It is probably no issue of fan speed, there may be somthing else wrong, a sticking thermostat or a dirty radiator. When the fans work, the temp should go down in a matter of minutes or less.

I really don't know...
All you say is right... BUT
How to explain that when at constant speed of 40-50 mph the temp is able to decrease very fast UNDER the 180 ?
This can be explained with the fatct that the thermostat is doing his work and that the flow to the radiator is NOT blocked by dirt....

Another question:
Is it normal that killing the engine the fans stop to runs?
On my others cars if the fans are ON when I stop the engine these will continue to run for a while ....

My '90 has 180 t-stat and a 185-200 switch and it kicks on at 200 and will come down to 190ish and hang there, never really goes off until you get rolling again. I'm using JET's products on my car and you can set it up to run both fans instead of one, I like the temperatures that I have, but I don't like the continous run either. The issue that I wonder about is short cycling, most machines don't like to cycle.
