My 89 runs at about 185 on the highway and 198 in the city. I cheated and had my ECM chip modified to turn on the front fan at 198 deg F. My stat is a 180 deg unit. I just do not like to see the 220s on my engine.
'89 Stock - 195 on the freeway (thermostat) - 205 - 212 in town with the a/c on. I drove it off the lot that way 17 years ago and I'm pretty sure there's never been a long line of new Vette owners complaining about temps at the Dealership. Check air flow and make sure the cooling system is squeeky clean. New radiators do wonders for tired cooling systems but it has to have air flow to work properly - that means cleaning all the stone chips out of the lower portion of the Condensor (and straightening any bent fins) or replacing it too. While you're at it, check a/c charge (if it's hot with it on). Plugged up a/c systems raise condensor temps.
