The difference between the 2600 and the 3000 stall is the 3000 stall converter will allow the motor to spin up to ~3000 RPM before it reall starts to "grab" with all it has. This does not mean that the car will not go anywhere until 3000 RPM, but rather the easiest way to think about it is slipping your clutch until 3000 RPM.
I would suggest the 2600 for a mostly stock car. If you decide one day you would like to step up to heads and cam, you might want a little more stall. With the Vigilante, you get one free stall adjustment free! You can't beat that!
