Couple quick questions all,
--Should I use threadlocker, or doesn't it really matter?
--Tighten from the center out, or stagger?
--How much torque? (85, iron heads)
I would think that threadlocker is no use, most threadlockers will give at high temperatures, as far as sequence I would start in the center and gradually step up to the torque in increments, like in the head torque sequence.

That's the default procedure for most things, in lieu of instruction to the contrary. Recheck after a heat cycle and again after a few more and you should be good. I use stainless header bolts, no Loctite and have no problems with loosening.
