My LT runs right at 196degrees at anything over about 40mph.
Under 40mph and it depends on exact speed and ambient temps, but it can go right up to 220, at which point the fans kick on.
I'd think 200degrees or so would be in an acceptable range, so you shouldn't be overly concerned.

My fan not coming on was caused by a faulty ECM controlled radiator fan sensor/switch. $15 fix. Thanks to Coaster for sending me detailed wiring diagrams. To 65Z06 for teaching me some bypass tricks that got me on the road. And especially Hooked on Vettes who finally nailed it.
The ECM must of already been reprogrammed to make the fan come on sooner as it comes on at 217 and cools to 180 and stays there when idling a long time!
At least I am very familiar with the cooling system now.
