When I removed the vacuum fittings on the plenum (87 L98), there was "gunk" on the threads. I can't tell if this is just 20 years worth of stuff or should I use something on the threads when I put them back in?

I did. I had to clean some of that off to. The stuff is so old and hard that it obstructs the threads. How's it going? I used Teflon pipe thread sealant, high temp for autos.
The normal teflon sealant does not say for high temp. so I always used the tube that says high temp. for automotive use. Fleet and NAPA should have it. I can bring some with if you still need it, a large tube lasts forever. Many other bolts get locktite or never seize, some do not get anything so as to have a ground.
