Default L98 intake manifold question

umm I just took off my L98 manifold (after dealing with this )

and found little plates at the coolant holes, like thin dog taggy plates blocking them.. now the LT1 that I'm putting on seems to be solid at the rear for the coolant but has pipes at the front, I guess I mean to say is wtf are these things and do I need to use them on the LT1?

Not very clear what you are saying but:
the L98 have the rear water jackets blocked with the mentioned plate
only a bleed hole in them,

The LT1 has NO water going into the manifold,
Assuming you are doing a LT1 swap what gaskets you use will depend on where you are taking the vcoolant out of the LT1 manifold.
If rear like most conversions then will need "normal " SBC gasket with open rear coolant hole.
If from the front then you can use a L98 gasket with the closed rear hole
