I trust you mean that the car is new enough that it has 4 O2 sensors, 2 behind the cats? If so then you need a set of 02 simulators to prevent codes. I don't know if those codes really hurt peformance though, or if it's just to keep you honest.
You can use a simulator because those sensors don't do anything for tuning, they just tell the computer if the emmissions system is still intact. If you try to use simulators up front your car either won't run, or won't run well.

If your looking to run without cats, simulators are old technology.
A good tuner can eliminate them by programing the PCM and resetting the fuel curve so you won't throw codes.
Cartek did mine and I have no code problems.
If you have ODBII, you may run into some smog problems in certain states pretty soon. I have been reading about the new rules and they will go a lot further in determining if you have modified the major systems or the PCM.
I'm not sure what states have implemented the new test, but I think a few have. The deal is that they hook a scanner up before they do the regular smog test.
They won't test a car with a trouble code showing and more importantly, the OBDII will tell them the status of your major systems - including O2 sensors. If you don't have the simulators, the PCM will rat you out.
You still have the risk of being caught on the visual, but the simulaters should handle the scan.
This only applies to 96 and later models and only in states that have implemented the standard.
P.S. The Ease scanner (for ODBII) will run these test and let you know if you will have a problem.
If you are talking about the sensors that are after the cats, they don't have anything to do with engine management - so no programming for fuel curve or any other operational parameters.
All they do is confirm that the cats are working.
Your only issues are how to keep the engine light off and your exposure (if any)to the new smog test.
