What is the differance between the factory large single fan and dual fan systems?? Which provides the most air flow and by proxy best cooling????

Depends on the year. There are several versions of dual fans. Some are front and back of the radiator, some are side by side. Some are single speed and separately controlled, some are dual. I have no idea what "by proxy best cooling" means. My 1989 has 2 fans that are located on each side of the radiator and come on and off at different temps.

More airflow typically means more cooling however technically better cooling encompasses many other variables however for the sake of simplification by proxy means more airflow equals better cooling.

From everything I've read - Pushers - fan in front of the Condensor provides better a/c performance at idle, but at cruise can impede flow. GM didn't design it to do anything and realistically, if your system is right, the sucker, behind the Radiator, will keep coolant temps below the "on" threshold for that fan. In fact, if it's running, you're probably dragging down the allready overtaxed alternator and as both fans slow down, things heat up - check your radiator and cooling system. Dual sucker fans, which are lighter and draw fewer amps were incorporated to meet the demands of R134 refrigerants which under higher ambients can build substantially higher pressures which is substantially more heat. Only one fan is necessary (for most cars) during non a/c operation and only the secondary is necessary at ambients above 70 degrees. Neither impedes flow at cruise and most shut off with a VSS signal of 40 mph.
