Eratic oil pressure
Driving at about 55 - 60 the oil pressure on my 85 vette
varies between 32 and 52.
It mostly runs around 45 then will become eratic
dropping into the 30's and running up to the 50's.
Any idea what could cause this?

I would suspect the oil pressure sender on the back of the intake manifold.
However, you should verify what its reading before you replace it with a mechanical gauge. Usually when it fails it gets stuck at 80psi reading.
Hopefully its not the pump dying.
