Default Operating Temperatures?

As i am a novice owner i have a couple questions - this is for an 89:

1) what is the normal operating temperature to which the coolant fan comes on? I had the car idling this evening and it switched on at about 220

2) how does that temperature relate back to the type of thermostat that i may have. Is there a way to determine if i have a 160 degree thermostat based on the operating temperature

3) Normal oil pressure number during operation - it seems to ramp up during the start up (50ish) and then when the operating temperature goes up the oil temperature goes down (at idle) around 30ish.

Do these numbers sound about right?
