i have ordered a transmission from outlaw .i went with thier stage 3 transmission, not with the most agressive shift.my car is a 383 sr,afr heads, long tubes, agressive cam.with 400 rwhp should i go with a1800 or 2400 stall.transmission guy says one thing ,mechanic who is helping me with car says another.its not a track car yet it will see some track time,i would mainly be concerned with streetability
Whether it's for street OR strip, I'd go with a 2400. I don't know the specs on your cam, but any "aggressive" cam will start to make power over 2k RPM, so I don't think a 1800 will do you any good at all. 2400-2800 stall is perfectly streetable, some go all the way to 3500 and still maintain moderate streetability.

I agree with the above.
To go further, with your 383 SR set-up, your torque peak is undoutbtly right in that 4k rpm area...... thus the closer you get to that, the quicker you will be. Having said that, a quality 2800-3000 rpm converter will be very street friendly with minimal slip.
Given your two choices, the 2400 rpm is a no-brainer, but still considerably too tight in my experiences.
I have a 383 with a 9.5" 3k stall from PeteK and it is perfectly fine as a daily driver. no issues at all.
I have stock cubs and a 3K stall. My Vette has a sizable cam and I idle it around 800 rpm. The 3K stall is perfect for the street and strip. I used to get brake growl at stop lights but with the 3K stall it doesn't.
