Thought I'd close this one out. If you read thru the posts you'll see everything I did. The final attempt involved replacing the new (albeit AutoZone cheap) VSS with a new VSS from AC Delco.
After roughly 60 miles of driving, including many full throttle runs thru a couple gears, all appears to be normal. The speedo doesn't jump around, drop to 0mph, or shoot to 220mph.
Now I can finish my part throttle tuning and get down to Tom Wongs place for WOT
I got my new VSS from rockauto. I'm pretty sure that it wasn't a Delco part. Seem kind of odd that it does the same thing with the old/new parts in both of our cases. Maybe there is a slightly different characteristic in the OEM. I'll wait a while before springing for another one to see if your problem pops up again.
