If you're using Datamaster, you can export the data into a .CSV file, which is an excel spreadsheet that it records up to around 25 columns of data. With them in CSV format, you can also plot all kinds of graphs if you know how to make them with Excel.
If you're not using Datamaster, i'm not sure, but there should be an export feature of some kind.
