You understand correctly. A "bar" is an atmosphere. A one bar MAP senses manifold "pressure" from between zero and roughly, 15 psi, which is atmospheric pressure (14.7 at sea level). It is the common naturally asperated MAP. The "2 bar" will measure to roughly 15 pounds boost (two atmospheres) and the "3 bar" to about 30 psi boost. The lower numbers of "bar" increases the resolution of the read out. Don't use what you don't need.

The GM one bar sensor goes from 0 to ~14.5" vacuum (0 to -1bar). GM's 2 bar sensor measures 14.5" vacuum to 14.5 psi of boost (1 bar to -1 bar), GM 3 bar Sensor measures 14.5" vacuum to 29.0 psi of boost (2 bar to -1 bar)

Shalin(blownc4) was one of the few programmers out there to program a GM ecm with the factory map sensor. He programmed his SC'd 93vette and I believe he did a couple 7730's as well.
He sold his 93 and now is into supra's . You may be able to drop him a email and see if he can help you out.
