I have a stock ’89 and I am in the process of replacing head gaskets.
A friend has offered to bead blast whatever I want at his shop. I am thinking most of the fuel stuff from the intake manifold up and the valve covers. I would tape over all mating surfaces to protect them.
Any thoughts? Would you then coat everything with something? Clear coat? I know there is available a spray paint for the original look on the valve covers, is that a better way to go?

I do it all the time, just remember to clean it out. When I say clean it I mean CLEAN IT. Use a good clean solvent and wash the inside out 3-4 times, then blow it out good with compressed air. When you are pretty sure you have all the residue out, clean it again with solvent and blow it out again. Check the inside with a light and be absolutely sure there is no media caked up in a nook or cranny. Clear paint won't stay nice for long, if you want to do it in a color then powdercoating is the best method, second choice would be POR-15.
