Default erratic cooling fan

My fan never seems to come on at the same temperature twice. Since I bought the car it's been coming on around 210*, sometimes 215* and yesterday it went up to 230* before it kicked on.
So my question is this - from what I understand the fan is controlled by the computer. How can I tell if the temp sensor is the problem or if it's the computer causing the problem?
Also I'm thinking about adding an auxilary fan. I hate to spend $200 on a electric fan when I can go to a salvage yard and probably get one for around $20. Anyone have any first hand knowledge of slapping a generic fan with a manual switch on a Corvette?

On my Trans Am I just grounded the fan temp sensor with a toggle switch in between. It was a lousy quick fix when I was in a bind. On the Vette I replaced the fan temp switch with one from a Pontiac of some sort that had the same threads and plug but it turns on at, 216 I think? I went to a parts store that had pictures of fan temp switches and said what temp it came on. So I used the Pontiac? one. Works great.

The sensor is a variable resistor. Install a new one ($15) and see what it does.

You may want to look into one that comes on at 200 and off at 180..(temp switch)

JonM that sounds like what I'm looking for. Do you have a part # or an application so I don't have to spend $50 at Eckler's for a $15 sensor?
I checked with a parts guy today, he looked through his book and really couldn't help me much
