it's a pretty simple bolt-on affair - the only "gotcha's" are going to be the overall height of the intake/carb/air cleaner that you chose and if it will fit under the stock hood. Just take your time, clean up stuff as you go and before removing the intake (as to not drop dirt/grit/gunk down the engine.) Use a rag to line the lifter valley after removing intake and before cleaning up the intake gasket surfaces - vacuum everything up before re-assembly.
I'd add that it's a great time to do a cam swap - since you've got a flat tappet cam and are going to a carb you can use a cheap $120-150 cam/lifter set and get a lot more performance out of the engine at the same time since you don't have to worry about computer compatibility and are going to a shorter runner...
