Get yourself a service manual if you don't have one first. It isn't a bad job at all. :) Depressurize the fuel system, remove the plenum & runners, unbolt the fuel lines, take the 4 holddown bolts off the fuel rail, unplug each injector, disconnect the cold start valve, pop the rail off. After that it's pretty easy to replace the injectors. :)

As for the injectors- the FMS are good replacements from what I have heard.. I know SpeedDemon M/S carries them for $230 for a set of 8. They are actualy rated at a lower psi, so on a vette, they will act as a little bit bigger an injector (they are rated at #24, but have heard that they act like #26 or #28).
