Default tempature in 85 vette

What temp should the 85 350 LT1 engine run at ? and what temp setting should I have in for my thermostat?

It should be around 190 or so in light traffic but if it hits 228 the fan should come on and it will drop to around 210 then repeat process. I put in a 180 degree thermostat but a 195 should not make that much difference.
