I recall correctly, if the car is locked with windows down/ top off or down and you reach in and unlock it manually & open the door the only way I know to turn it off without taking off the battery terminal is to insert the door key and lock/unlock it. Not sure if this is of any help with your issue but the only resolution I recall.

don't think VATS has anything to do with the horn. Why don't you think it is a problem with the horn switch or alarm system? More detail might help.

If either door ajar switch is bad it'll cause the horn to sound, (replace the door ajar switch). Inserting the door key into the drivers side door should stop the horn.

If not, the door lock wire, could've also, come loose or broken off?

The TDS (Theft Deterrent System), also known as UTD (Universal Theft Deterrent) is disarmed by unlocking the door with the key (or a keyless entry system). Sometimes if you don't return the key cylinder to the fully vertical position the TDS will still be armed and will honk the horn when you open the door.
