Default Troubleshooting engine trouble

Hello all! You may have seen my intro post that mentioned that I would post a question. Going into detail, it's about an issue that I'm having with my newly acquired 1989 Vette.

Before purchasing, we did a test drive last weekend which went perfectly. I purchased it yesterday and drove it home. The wife and I rode around in it a few more times which totaled about 40 miles of driving. We had the targa top off and were loving it, so we decided to just drive around and enjoy the night but that's when things started happening.

There had been a few times I had opened up the throttle during acceleration to have some fun. Nothing crazy though. I went to do it again, as the RPM's went up, we jolted forward as if I had shifted up to a lower gear, even though I was in first. I shifted to second, all was well, as I reached around 2400 rpm it did it again. I found that no matter how hard I accelerated, once it reached a certain RPM it would jolt. We turned back around and went home. I researched it this morning and one of the things I read was that this could happen if the motor gets too hot. I went to run it later on and it idled fine, but it eventually struggled to stay alive until it died. For a bit it would start up and struggle but now it won't start up at all.

I have been suspecting a fuel flow issue. Whether it's a clogged filter, a failing fuel pump, or some computer sensor, but I'm not entirely sure because I don't particularly know the result of them being faulty.

If you read my intro, then you'll know that I'm not too knowledgeable on vehicle maintenance but I'm experienced with aviation maintenance so I know my way around tools and turning wrenches and what not. I'm ready to learn... Thank you guys in advance!
