I need to locate my head gasket leak. I did want to pull the engine for a refresh. (this is a toy, it can be sitting for awhile)

However I want to pull the heads and see the extent of the damage before I go purchase new hoist and stand.

Do I make it harder on myself lifting with the heads off verses using the happy hooker on the intake?

Don't really matter with or without the heads on. If the heads are on I put a chain from the back of the head to the front of the opposite head, Heads off I hook the chain between two headbolts.

I usually pull the entire engine headers and all. IMO quicker to remove heads/headers, alternator etc on the engine stand than in the car.

Since you want to look over the heads before refreshing the engine. Just unbolt them and pull them. Unless you have a 84, 85 or iron block 86 they will be aluminum and not weigh that much.
