With stock T-stat my '89 would climb to low 200s before turning on the fan. Some guys like this OEM range.

I prefer a 160 deg. F T-stat with a fan switch as it produces a bit more power.

My 88 with a 180 deg stat runs in the 180s unless I am in heavy traffic and then it may get to the high 190s to low 200s. As soon as i start moving good the temp goes right back down to the 180s. That is in 90 deg plus temps in south Mississippi.

Unless there is a problem or it's just brutally hot, you should be running close to your thermostat while moving... 196 or lower if it was replaced. Stopped it can go upwards of 230 depending on when the fans are programmed to come on.
