The Corvette might be a bit more challenging to replace the clutch on, but it is not a big differance.
In my opinion an average workshop with a vehicle lift and transmission lift, normal workshop equipment, should easily do this in one day.
It it is a chevy dealer and they can't even figure out what year it is then that is bad.
Was the clutch slipping? then it was probably bad.
It the clutch was not disengaging making shifting hard, then the master cylinder is more likely to be the cause.
Do you have a ny pictures of the parts they replaced?
I'd ask for the old parts back.

If the clutch was not releasing it would make for hard shifting, but the cause could be a bad clutch or bad master or slave cylinder.
Pictures would be helpful to see the condition of the parts.
I tend to think the dealer had no interest in fixing your car. The price is way too high, they want you to get all the parts, they gave you the wrong part # for the wrong year. It sounds like they did not look for the cause and started charging you for repairs that may or may not be needed since after the job they tell you about the hydraulics which may have been your only problem.
There is almost no difference between your corvette vs other cars for a clutch repair. The only basic difference is that there is a C beam between the transmission and the rear axle. That only takes a few minutes since it is only 2 bolts in front in back.
What cable goes between the clutch and the transmission that you had to buy for them. There is no cable. If you give the part number of what you bought, perhaps we can figure out what it is.
In short, they are abusing you with high prices, shoddy work, and even putting it back on you to get parts.

The cable they are speaking about if your car has one the (Dent) I guess it could be Brittle with 20+ years of service, but I wonder if they forgot about it and had a WTF moment on the way out.
