Shop Reference to do a 383 Stroker EFI conversion
Thought I found a gent, but he no showed our first meeting to go through "build goals"...
Can any of your recommend a reputable shop in the Houston area? I actually live in Spring, Tx (suburb).

When I built my engine I made a deal with a Speed Shop owner. I bought most parts through him and he and I would assemble the engine together. This allowed me my first experience with a Big Block engine. We did the assembly together and he would weigh the pistons, install rings and balance them all. I learned a lot about big blocks from this guy and he explained the parts I was less familiar with. This works if you have time to dedicate to the project which is difficult for some folks.
You might consider buying a 383 with a warranty and built to last. There are some good options out there in Summit and Jegs. I would take your original engine and clean it, spray it full oil and bag it. That motor might pay for the install of the 383. If I wanted to have my long block rebuilt I would have it done by a busy machine shop that does GREAT work. They do so many engine that they have a better idea than I do of how to build the motor of your dreams. I have a NAPA shop that does several engines a week and has several very talented Mechanics.
