Data Logging and Chip Burning

I am going to need to be able to datalog at a minimum due to the modifications to the car which will hopefully be complete over the next couple of days. You can follow along the long journey of that process and see what are mostly my struggles here, L98 Top End Upgrade Process.
To continue, I got a good base tune, at least what I hope is good, from PCMofNC which I hope will get me started and run fairly well. However, I know there will probably need to be minor changes to it to maximize the output from the car. I am trying to figure out if data logging and sending it to him will be better in the long run or if I should get the Moates APU1 AutoProm package so I can burn my own chips and do it all myself with the obvious learning curve at an equipment cost of about $330.
Then to throw into the mix, there is the Ostrich 2.0. Seems like it is a fairly simple unit for half of the price of the APU 1 and deletes the middle man of chip burning and is basically On-The-Fly for any changes with a cost of about $175
It seems just the data logging cables and cost to have a chip reflashed at PCMofNC is approximately $130. $80 for the cable and $50 per chip reflash which could get quite expensive for something I could do myself.
Please let me know your thoughts and experiences. I'm leaning towards the ostrich due to cost and capability, but I have never used it before and am unsure of possible hidden quirks with it.
Thank you all!

I think I will be leaning towards the APU1 package as of right now as it comes with everything needed in total and allows me to burn chips for better long-term use in comparison to the Ostrich.
Oh...APU1 does allow adding WB (which I don't own, yet) into datastream...

For the wideband, is it just the sensors that would be needed then for the input or a whole wideband setup?
