Every thing you mentioned has really nothing to do with shut down, so when it shuts down the question is what's dropping out,
Spark (Coil, Opti) wouldn't surprise me
Fuel or injector problems
That's the information that is needed

Thank you for that! Any brand recommendations for an opti + fuel injectors? I went ahead and ordered a new ignition coil, along with a miscellaneous parts, I'll add your recs to the cart as well. (I wanted to also note that the car has 177k miles on dash at the moment).
Don't buy any more parts before you find out (as pointed out) what is dropping out. When it won't start put a spare spark plug in any wire and ground it out and have someone crank it and see if you have spark. My money is on ICM or coil. Dan
You already replaced injectors you mentioned that at the top, as part of the Diagnostic tools that you need for the injectors is a Noid Light sometimes called an Injector Pulse light. If you you can look into getting a Shop Manual (Hay's/Chilton) don't count for deep in-depth Diagnostic.
There are Electronic or Paper versions of the G.M. Service manual I recommend finding one
