What causes the low coolant light to keep going on and off as I drive. I have checked the coolant its fine, but when im driving it comes on and off. Were is the sensor located, is it near the overflow bottle I have an 86 coupe. I have changed the radiator cap that didnt work.

Coolant sensor is located on the front of the engine, just below the Throttle Body.

The sensor is located 3 inches or so below the radiator cap, has a single wire connected to it. Even though it looks full, it sounds like you have air in the system. Try taking the cap off (when cold!) and start the engine, maybe rev to a couple grand or so when the stat opens open you may see the level drop and fluid can be added. Others may have more ideas on removing air from the system.

I think Oldman may be refering to the temp sensor....

Low coolant sensor is below radiator cap as 87SAM says. Coolant TEMP. sensor is below throttle body

If the system can pull air it won't pull coolant from the overflow resevoir; check all hoses for leaks that would break the vacuum seal.

If the bottom of the resevoir or the overflow tube are clogged the system cannot pull coolant back into the radiator; pull the resevoir and clean it and the overflow tube.
