One gasket is all you need. The gasket seals between the goose neck and the intake manifold, not directly on the stat. Some people don't use a gasket at all but use a bead of silicone that forms a gasket. If you use silicone be sure to allow 24 hours for it to cure before filling with coolant.
devilfish, I just went through the same thing after engine rebuilt.
First, I tried a silicon gasket which said do not use RTV(it was very thick, over .5 cm). I't didn't work. One of the Forum members explained that GM housings warp or bow. You need to check this with a streight edge. To fix this he said use a belt sander.
I threw out the $5.00 gasket and bought an $.89 gasket. RTV on both sides. Drove it after 12 hours cure(I know, I know, I should have waited 24).
I have over 300 miles on it now.
