What is the best oil and filter to use for changes? I read that even though it holds 5 qts, I should put 6-7 qts in. Is this a good idea? Sounds slippery to me.
Also, how do I identify a K&N air filter? The one I pulled has a thick foam and a red gasket, metal mesh on backside. Is this a K&N? If so, how do I know if it is still any good?
I'm a mechanical moron, so I figured what better to learn on then a Corvette?

That sounds like a K&N to me. They put red dye in their filter oil. You might as well buy the K&N recharge kit for it and go to work on it. There's cheaper alternatives for cleaner and oil if you know what to look for.
Your vette takes 5 quarts oil, don't overfill it. You don't want the crank to be paddling through all that oil.
Fill up the filter first, and screw that on. I'd recommend a K&N oil filter, they're arguably the best quality (bulletproof), but are also pretty expensive comparted to Fram. Fram is crap, and I've bought a few that had metal shards in them straight out of the box. :rolleyes: Basically, the price is the best indicator of quality, and what good does it do ya to save $3 over the course of 6 months?
As for oil, I'd stay away from synthetic unless you're brave, and have lots of time to chase down new leaks. I'd go with Castrol or Valvoline 10-40.
I'm with CentralCoaster. I'm sure a lot of guys here probably use Mobil 1 or some form of synthetic, but in an older motor, I'd rather use Castrol or Kendall then spend my time chasing down new oil leaks appearing after the switch to synthetic.
